Tuscan cuisine is well known for its rich meaty dishes but historically its roots are vegetarian. Traditional dishes were made using cereals, vegetables and legumes. I am a strong believer in non cruelty towards animal and respect for this precious planet.
This led me to look for a cuisine that was authentic and respectful of our fragile ecosystem. My cooking classes are strictly vegetarian and vegan, using mainly organic produce and raw foods from local producers.
So, let’s hand roll the pasta or create any other dish you may like and sit together to share a well deserved delicious meal! Wine is of course plant based and a local essential.
