Ingredients:

• 300g stale bread
• 300g milk
• 250g minced veal
• 250g minced pork
• 100g grated cheese
• 200g grated provola
• 200g cooked spinach
• 1 onion
• 2 carrots
• 2 stocks of celery
• 100g breadcrumbs
• 2 eggs
• Extra Virgin Olive Oil
• Salt and Pepper

Procedure:
Soak the stale bread in the milk. In the meantime sauté the finely chopped onion, celery and carrots with a little oil, cook until they are soft.
In a large bowl put the meat, with the strained bread, the grated cheese, the eggs, salt and pepper, and the previously cooked vegetables, mix well until you have a smooth texture.
Put the mixture on baking paper and give it a rectangular shape using a rolling pin, cover with the spinach and then with the grated provola.
Roll it all with the help of the baking paper and give it the shape of a candy roll. Bake in a hot oven of 170 degrees for 40 minutes.
