  • 500 gr flour
  • 120 gr sugar + 2 dessert spoons
  • 130 gr milk
  • 60 gr butter
  • 30 gr. Bitter cocoa powder
  • 6 eggs
  • 13 gr. Brewer’s Yeast
  • 2 dessert spoons icing sugar
  • Grated zest of 1 orange
  • Vanilla

Put the flour, the sugar (120 gr) and the yeast in the mixer, add the milk, 4 eggs and the vanilla. Knead for about 10 minutes and when everything is mixed work by hand. Divide the dough into 2 equal parts. Put the first half in the mixer with the orange peel and gr.30 of butter, work for 5 minutes and then form a ball and let it rest covered with clingfilm. Put the other half in the mixer and add the remaining butter (30 gr) and the cocoa, work for 5 minutes and then make a ball and let it rest covered with clingfilm. Leave both doughs to rise for about 3 hours.

After the time roll out the doughs trying to form 2 equal rectangles. Brush the light dough with a yolk previously beaten with 1 tablespoon of sugar, overlap the second rectangle and brush with the other egg yolk beaten with sugar, roll and cut into discs of about 1 cm and lay them on a baking pan covered with oven paper. Brush with a mixture of butter and powdered sugar, let it rise again for at least 1 hour and then cook at 160 ° for 15 minutes with a little moisture.
