- 500 gr. Yellow potatoes
- 200 gr. carrots
- 200 gr. cabbage
- 100 gr. broccoli
- 2 cloves of garlic
- 2 eggs
- 100 gr. Grated parmesan
- 100 gr. breadcrumbs
- 50 gr. Extra Virgin Olive Oil
- salt / black pepper
- extra virgin olive oil
- lt.0,500 seed oil (for frying)
Boil all the vegetables separately in lightly salted water.
Put only the potatoes through the vegetable masher. Cut the other vegetables in very small pieces and fry in a pan with the oil and garlic to flavour, evaporate as much of the vegetable water as possible.
Mix the vegetables with the potatoes, add the parmesan, the eggs, and a small amount of breadcrumbs.
Make into balls about the size of a walnut, pass in the remaining breadcrumbs and fry in the seed oil until golden.
Serve hot, they are excellent with an aperitivo.
