  • 50 kg. Wild boar meat
  • 1 Lit. red wine
  • 2 Carrots
  • 2 Celery stocks
  • 1 Large onion
  • 2 Cloves of garlic
  • 1 Sprig of rosemary
  • 5 Sage leaves
  • 2 Juniper berries
  • Pepper
  • Salt
  • Extra Virgin Olive Oil



Cut the wild boar meat and all of the vegetables into pieces and put everything with the herbs into a bowl. Cover completely with red wine add the juniper berries.

Leave it to marinate for at least 24 hours.

After the marinating time remove the meat from the marinade.  Strain it and put it aside. Place all the vegetables and herbs in a large pan with a little extra virgin olive oil.  Cook until it dries.  Add the meat and mix thoroughly until all the liquid evaporates.

When everything is dry add the wine from the marinade and as soon as it boils, turn the heat down low and cook slowly for at least 3 hours, or until the meat is tender.  Season with salt and pepper and serve very hot.
