Fig and Pear Strudel

  • 300 gr. flour
  • 60 gr. butter
  • 50 gr brown sugar
  • 2 eggs
  • Milk
  • Salt

For the filling:

  • 20 ripe figs
  • 1 pears
  • Cinnamon
  • 50 gr. Brown sugar
  • 1 egg yolk
  • 50 gr. butter
  • ¼ glass of grappa
  • 50 gr breadcrumbs
  • 20 gr.dark chocolate drops
  • 20 gr. Chopped hazelnuts
  • Juice of ½ lemon
  • Rind of 1 lemon finely cut


Put the flour, eggs, sugar, softened butter and salt in a container, start mixing and then work  with your hands on a pastry board, if necessary add the milk. The dough should be soft and elastic. Let it rest covered with a cling-film (to prevent it from drying out) for the time it will take to prepare the filling, at room temperature.

Cut the pears into thin slices, after peeling them, and put them in a container with brown sugar, grappa and lemon juice.


Spread a floured cloth on a work surface and roll the dough very thinly, trying to create a rectangular shape. Sprinkle with butter and then the breadcrumbs, the pears without the juice, the figs cut into quarters, the chocolate chips, the hazelnuts, the cinnamon, the lemon peel and finally the pear juice.



Roll the strudel (from the longest side) and slowly place it in an oven dish, beat the egg yolk and paint it on the strudel with a brush.

Bake at 170 degrees for 45 minutes.
