As you know,  on Monday the market of local producers of fruit, vegetables and cheeses is a MUST for the supply of my kitchen. As well as all the vegetables, I also bought lots of celery that I needed to make panzanella. During the arrangement of all the products in the refrigerator I realized that I had no place for the leaves of celery…

So I tried to find a solution to the problem of space in my refrigerator … and I decided to make a pesto with the leaves of celery…

I did not say anything to the family and I served pasta with this pesto and everyone asked me what I had  put in it as it was so good?

So you should try too, it is very easy:

  • 200 g celery leaves
  • 50 g almonds
  • 2 cloves of garlic
  • Salt & Pepper
  • Extra Virgin Olive Oil
  • 400 g Penne

Blend all the ingredients together, the result must be very liquid.

Cook the pasta in abundant salted water and at the same time warm the sauce in a large pan, where you will then put the pasta “al dente” with a bit of starchy  water.

Serve with plenty of Parmesan or if you prefer grated pecorino.
