Bread with mint and thyme

Today, after a terrible storm, I went to see how all my aromatic plants were doing.

Well, they are all still beautiful, fresh and in excellent condition, and I felt like picking some for a bread for breakfast. I picked the mint because I like the smell, it gives me a fresh and clean feeling, and a little lemon thyme, I like the lemon flavour that it leaves on my fingers when I touch it, Then I returned to the kitchen and I set to work:


  • 500 gr.  “O” Flour
  • 250 gr. Whole milk
  • 30 gr. Fresh mint
  • 15 gr. Lemon Thyme
  • Zest of 1 lemon
  • 50 gr. Butter
  • 2 Dessert spoons honey
  • 12 gr. Baking powder
  • 5 gr.  Sale



I chopped the herbs with lemon peel with a knife.

In the mixer I put the flour, milk and baking powder and started work it with the hook, then I added the honey, the butter, the herb mix and finally the salt.  I mixed for about 10 minutes.

I let the dough rest for about 2 hours inside the closed oven (to avoid drafts) and then I worked it gently for a few minutes. I put it in the same rectangular pan used for plum cake, let it stand for 20 minutes and then I baked it for about 40 minutes total

It is excellent for breakfast cut into slices with jam or honey.
