500 gr. fresh anchovies
100 gr. raisins
70 gr. pine nuts
6 tablespoons bread crumbs
6 tablespoons extra virgin olive oil
salt and pepper
Preheat oven to 375 degrees Fahrenheit.
Clean the anchovies, wash and drain.
In a bowl, mix the breadcrumbs, pine nuts, raisins, 3 tablespoons of extra virgin olive oil and add salt and pepper to taste. Mix in the minced zest and juice of 1 orange and 1 lemon. Set aside a small portion of this.
Stuff the anchovies one at a time in the mixture and roll them with the skin to the outside. Place in a baking dish with remaining extra virgin olive oil and a sprinkling of the breadcrumb mixture, alternating them with fine slices of the remaining oranges and lemons, previously cut in quarter of a wheel .
Bake for 30 minutes.
